Frozen Summer Berry Muffins

Ingredients:
Frozen Summer Berry Muffins:
3 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3/4 cup sugar
1/2 cup butter, melted
2 eggs
1 1/2 cups Buttermilk
2 tsp lemon zest
2 Tbsp freshly squeezed lemon juice
2 tsp vanilla extract
2 cups frozen mixed summer berries
Directions:
Preheat oven 375F/190C. Line a muffin tray with paper cases.
In a bowl, whisk together flour, baking powder, baking soda, and salt. In a separate large bowl, whisk the sugar, melted butter, eggs, buttermilk, lemon zest, lemon juice, and vanilla until smooth and well combined. Gradually add the dry ingredients into the wet mixture, stirring gently until everything is just incorporated. Fold in the frozen berries, being careful not to overmix.
Using an ice cream scoop, divide the batter evenly among the muffin cases. Bake for 25–30 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool before serving.
