Lemon Sugar Bunny Twists with Lemon Cream Cheese Frosting

Ingredients:

Lemon Sugar Bunny Twists with Lemon Cream Cheese Frosting:
2 puff pastry sheets, thawed
2 Tbsp butter, melted
1/2 cup lemon sugar

Lemon Cream Cheese Frosting:
1/4 cup cream cheese, room temperature
1/4 cup butter, room temperature
1/2 tsp freshly squeezed lemon juice
1/4 tsp vanilla extract
1 1/4 cup powdered/icing sugar

Directions:
Preheat oven 400°F / 200°C. Line baking trays with baking paper.

Roll out both puff pastry sheets and brush one side of each sheet with melted butter. On one pastry sheet, sprinkle about 1/4 cup of lemon sugar, leaving a 1/2-inch border along the long sides. Place the second pastry sheet butter-side down on top of the sugared pastry and gently press the sheets together. Using a fork, crimp the long edges to seal.

With a pizza cutter, slice the pastry in half from one crimped side to the other. Then cut each section into 3/4–1 inch strips. Take each strip and twist it twice, shaping it into a bunny shape with an open circle at the bottom and the two crimped ends pointing upward like ears. Make sure the circle sits flat and the two strips are slightly spread apart. Place the shaped pastries on the prepared baking trays.

Bake for 17–20 minutes, until the pastries are puffed and golden brown. Allow them to cool for 15–20 minutes before frosting.

While the pastries cool, prepare the frosting. In a mixing bowl fitted with a paddle attachment, combine the cream cheese, butter, lemon juice, lemon zest, and vanilla. Beat on medium-high speed for 5–7 minutes until smooth. Lower the speed and slowly add the powdered sugar. Gradually increase the speed again and mix for 10–15 minutes, until the frosting is light and creamy.

Transfer the frosting to a piping bag fitted with a star tip and pipe onto the circle part of pastries, making a bunny tail. Sprinkle with more lemon sugar and serve warm or at room temperature.
