Radish Lemon Salad

Ingredients:
Radish Lemon Salad:
1 1/2 cups red radishes, finely chopped
1/2 cup fresh parsley, finely chopped
1 Tbsp extra virgin olive oil
1 tsp lemon zest
1 Tbsp freshly squeezed lemon juice
1/2 tsp gralic powder
1/2 tsp salt
1/2 tsp pepper
1-2 tsp fresh chives, finely sliced
Directions:
In a bowl, add the sliced radishes, parsley, olive oil, garlic powder, salt, and pepper. Stir everything together well so the radishes are evenly coated with the seasoning and oil. Sprinkle the lemon zest and freshly chopped chives over the top and give it a light toss. Let the salad sit for about 10 minutes before serving so the flavors have time to blend and the radishes slightly soften while still staying crisp.
