Sweet and Smoky Bacon Chicken Apple Skewers
Serves: Six | Prep: 25 min | Cook: 30 min
Ingredients:
Sweet and Smoky Bacon Chicken Apple Skewers:
1.5 lbs chicken breasts, skinless and boneless, cut into 1-inch cubes
2 apples, peeled, cored, and sliced 1-inch thick
1/2 lb bacon, slices cut in half
1/3 cup light brown sugar
1 Tbsp olive oil
2 tsp chili powder
1 tsp paprika
1 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp pepper
Directions:
Preheat barbecue to medium-high heat and prepare your skewers. If using wooden skewers, soak them in water for at least an hour to keep them from burning.
In a large bowl, mix together the olive oil, chili powder, paprika, salt, garlic powder, onion powder, and pepper. Add the cubed chicken and sliced apples to the bowl and toss everything well so the seasoning evenly coats the chicken and fruit.
Take each cube of chicken and wrap it with a half slice of bacon. Thread the bacon wrapped chicken pieces and apple slices onto the soaked skewers, packing them fairly tightly and starting and ending each skewer with a piece of chicken to help hold everything in place. Place the skewers on the hot grill and cook for about 10–20 minutes, turning once halfway through, until the chicken is cooked through and reaches an internal temperature of 165°F/74°C and the bacon is nicely crisp.
Alternatively, you can cook the skewers in the oven. Preheat the oven to 400°F/200°C and place the skewers on a lined baking sheet. Bake until the chicken is fully cooked, then finish them under the broiler for a few minutes to crisp up the bacon.
