Spiced Bacon Wrapped Chicken Breasts

Ingredients:

Spiced Bacon Wrapped Chicken Breasts:
4 chicken breasts, boneless and skinless
8 bacon slices
1 1/2 tsp paprika
1 tsp onion powder
1 tsp garlic powder
1 tsp salt
1/2 tsp dried thyme
1/4 tsp pepper
1/4 tsp red pepper flake
2 Tbsp maple syrup
1 Tbsp red wine vinegar
2 tsp fresh chives, chopped
2 tsp fresh parsley, chopped

Directions:
Preheat oven 400F/200C.

In a bowl mix paprika, onion powder, garlic powder, salt, dried thyme, black pepper, and red pepper flakes until well combined.

Sprinkle the spice mixture evenly over the chicken breasts, making sure to coat all sides. Wrap each chicken breast with two slices of bacon and place them seam-side down in a cast iron pan.

In a small bowl, stir together the maple syrup and red wine vinegar, then brush the mixture over the bacon and chicken.

Roast for 25–30 minutes, basting halfway through, until the chicken reaches an internal temperature of 165°F / 74°C. For crispier bacon, place under the broiler for 1–2 minutes. Garnish with fresh chives and parsley before serving.
