Belfast Blackberry Bellinis

Ingredients:
Belfast Blackberry Bellinis:
12 oz fresh blackberries
1 lemon, juiced
2 oz chambord liqueur
1 bottle prosecco, chilled
Garnish:
Fresh blackberries
Fresh thyme sprigs
Directions:
In a blender, combine the blackberries and lemon juice and blend until smooth. Pour the mixture through a fine mesh strainer, pressing to extract a silky purée and discard the seeds.
To assemble, add 1 Tablespoon of the blackberry purée and 1/4 oz Chambord to each glass. Slowly top with chilled prosecco, allowing it to gently mix. Give it a light stir, then garnish with a few fresh blackberries and a sprig of thyme.
