Ground Beef Meatloaf

Serves: Four | Prep: 15 min | Cook: 60 min

Ingredients:

Ground Beef Meatloaf:
1 1/2 lb ground beef
1 onion, finely chopped
1 1/2 cups dried breadcrumbs
3/4 cup full fat milk
2 eggs
3 Tbsp tomato paste
2 Tbsp Worcestershire sauce
1 tsp dried parsley
1 tsp garlic powder
3/4 tsp salt
1/2 tsp pepper

Topping:
3 Tbsp ketchup
3 Tbsp light brown sugar
2 Tbsp red wine vinegar

Directions:
Preheat oven 350F/180C. Line a baking tray with baking paper.

In a large bowl, combine ground beef, chopped onion, breadcrumbs, milk, eggs, tomato paste, Worcestershire sauce, dried parsley, garlic powder, salt, and pepper. Mix everything together until well combined, being careful not to overwork the meat. Transfer the meat mixture to the prepared tray and shape it into a loaf.

In a small bowl, whisk together the ketchup, brown sugar, and red wine vinegar until smooth. Spoon the glaze evenly over the top of the meatloaf.

Bake for about 1 hour, or until the meatloaf is cooked through and reaches an internal temperature of 165°F/74°C. Remove from the oven and allow it to rest for a few minutes before slicing and serving.
