Pickled Scallions

Ingredients:
Pickled Scallions:
1 bunch scallions
1/2 cup white vinegar
1/2 cup water
1/4 cup sugar
1 Tbsp salt
1 tsp whole black peppercorn
1/2 tsp mustard seed
Directions:
Clean and wash the scallions, then trim off the roots and cut the dark green tops as needed so they fit into a pint-sized jar.
In a saucepan, combine the vinegar, water, sugar, salt, peppercorns, and mustard seeds. Bring the mixture to a boil, stirring until the sugar and salt have fully dissolved.
Place the scallions in the jar with the white parts at the bottom, then carefully pour the hot pickling liquid over the white portions, this helps keep the green tops vibrant and fresh. Let the jar cool to room temperature, then shake, cover, and refrigerate for at least 24 hours before using. The pickled scallions will keep in the refrigerator for up to three weeks.
